Five Stars® fresh yeast can be used for manufacturing any type of bakery products by using all the traditional bread making methods as well as all the new technologies currently used by Asian bakers.
Five Stars® is also adapted for frozen dough production.
It contains between 30% to 33% of dry matter.
Extremely crumbly, it can easily be incorporated during mixing cycle.
Five Stars® yeast is recognized for its consistency and high fermenting power.
Five Stars® fresh yeast gathers all the advantages of a fresh yeast in terms of performance and quality.
This fresh yeast is available in 2 qualities: each one specially adapted to a type of dough.
FIVE STARS® RED
This yeast is adapted for any bread with low sugar content and low fat. It is perfectly compatible with traditional and European style bread making processes, long processes, the use of volumetric dividers, controlled proofing methods, also part baked and frozen dough processes.
FIVE STARS® GOLD
This compressed yeast has been especially developed for all sweet dough processes which contain at least 10% of sugar in the recipe or for any dough with a high osmotic pressure. This fresh yeast provides high performance with long and short bread making processes.
Thanks to its quality parameters, end products have a nice crumb structure as well as a fine and shiny crust.
Five Stars® Gold is also adapted for frozen applications including laminated and fermented dough.
Add directly Five Stars® fresh yeast to the flour at the beginning or during mixing step.
Five Stars® is available in cartons of 20 blocks of 500g, individually wrapped in polyethylene packaging. Other packaging can be considered for specific application. Please contact us for further details.
To keep its quality performance, Five Stars® fresh yeast needs to be stored in cool conditions between +1oC to +10oC.
Up to 5 weeks from the production date in closed original packaging if stored in dry conditions with good air circulation at +1oC to +10oC.
